• Green Tea: An unfermented tea that retains the natural state of the leaves, featuring a fresh taste and a green hue.
• Black Tea: A fully fermented tea, known for its rich taste and reddish color.
• White Tea: Slightly fermented tea, mainly dried naturally or lightly processed, offering a light flavor and a refreshing effect.
• Yellow Tea: A lightly fermented tea that undergoes a unique ‘sealing yellow’ process giving it a unique yellow appearance and mild taste.
• Oolong Tea: A semi-fermented tea that bridges the gap between green and black teas, varying from sweet and fragrant to rich and full-bodied.
• Dark Tea: A post-fermented tea, among which Pu-erh tea is the most famous, suitable for long-term storage, improving with age.
Beyond these six categories, China also boasts a rich variety of scented teas and herbal teas. Scented teas typically involve mixing green or black tea with various flowers like jasmine or rose, enhancing the tea’s aroma while adding aesthetic value. Herbal teas, on the other hand, do not contain traditional tea leaves and are instead made from a variety of herbal plants like chrysanthemum, licorice, and mint, offering various health benefits.
